Description

A delightful baked cod dish featuring a creamy coconut and lemon sauce that enhances the fresh flavors of the fish.


Ingredients

  • 4 cod fillets
  • 1 can coconut milk
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • Fresh parsley for garnish
  • Vegetables or rice for serving


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a saucepan, heat olive oil over medium heat and sauté minced garlic until fragrant.
