Ingredients
- 4 cod fillets
- 1 can coconut milk
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- Fresh parsley for garnish
- Vegetables or rice for serving
Instructions
- Preheat the oven to 375°F (190°C).
- In a saucepan, heat olive oil over medium heat and sauté minced garlic until fragrant.
- Add coconut milk and lemon juice, stirring until combined. Season with salt and pepper.
