Description

A delightful dish featuring baked cod in a creamy coconut lemon sauce, perfect for any occasion.


Ingredients

  • 4 cod fillets
  • 1 cup coconut milk
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, whisk together coconut milk, lemon juice, lemon zest, minced garlic, olive oil, salt, and pepper to create the sauce.
  3. Place cod fillets in a baking dish and pour the sauce over them, ensuring an even coating.

Notes
