Ingredients

  • 2 tablespoons vegetable oil (30 ml), divided
  • 2 medium onions, very thinly sliced
  • 1 cup apple juice (240 ml)
  • 1 1/4 pounds (567 g) beef (see Tip), cut into 4 pieces
  • 2 teaspoons (10 ml) chopped fresh thyme
  • 1/2 teaspoon (3 ml) salt
  • 1/2 teaspoon (3 ml) black pepper
  • 1 1/2 cups (360 ml) finely chopped whole-wheat country bread, (about 2 slices)
  • 1/2 teaspoon (3 ml) paprika
  • 1/2 teaspoon (3 ml) garlic powder
  • 1 cup finely shredded cheddar or mozzarella cheese (120 g)


Instructions

  1. Set your oven to a temperature of 400 degrees F.
  2. In a large oven-safe skillet, warm 1 tablespoon of oil over medium-high heat. Stir in the onions and cook while stirring frequently, until they begin to soften, which should take about 5 to 7 minutes. Pour in apple juice, turn the heat to high, and continue stirring until the juice has slightly reduced, roughly 2 to 4 minutes.
  3. Arrange the beef pieces on top of the onions and season with thyme, salt, and pepper. Cover the skillet tightly with foil and move it to the oven to cook for 12 minutes.
  4. In a medium bowl, mix the bread pieces with the remaining 1 tablespoon of oil, paprika, and garlic powder. Evenly distribute this bread mixture over the beef and sprinkle with cheese. Continue baking without a cover until the beef is cooked through, approximately 10 more minutes.
