Description

A delicious and vibrant baked salmon dish topped with creamy avocado salsa, perfect for any occasion.


Ingredients

  • 4 salmon fillets (without skin)
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon lime zest
  • 1 tablespoon cilantro, chopped
  • Smoked paprika, to taste
  • Salt, to taste
  • Cracked black pepper, to taste
  • 1 large avocado, diced
  • ½ cup cherry tomatoes, chopped
  • ¼ cup red onion, finely diced
  • 2 tablespoons cilantro, chopped
  • ½-1 lime, juiced
  • Salt, to taste
  • Cracked black pepper, to taste


Instructions

  1. Preheat your oven to 400°F and spray a baking dish with non-stick cooking spray.
  2. In a small bowl, mix together diced avocado, cherry tomatoes, red onion, and cilantro. Squeeze lime juice over the mix, then season with salt and pepper. Cover and refrigerate.
  3. Pat the salmon fillets dry with a paper towel and place them in the prepared baking dish.
  4. Whisk together olive oil, lime juice, lime zest, and chopped cilantro in a small bowl, then brush this mixture over each salmon fillet. Season with smoked paprika, salt, and pepper.
  5. Bake the salmon for 10-12 minutes or until it flakes easily with a fork.
  6. Serve immediately, topped with the avocado salsa.

Notes

For best results, use fresh salmon fillets and ripe avocados. Adjust lime juice and seasonings according to taste preferences.
