Ingredients
- 4 salmon fillets (without skin)
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- 1 teaspoon lime zest
- 1 tablespoon cilantro, chopped
- Smoked paprika, to taste
- Salt, to taste
- Cracked black pepper, to taste
- 1 large avocado, diced
- ½ cup cherry tomatoes, chopped
- ¼ cup red onion, finely diced
- 2 tablespoons cilantro, chopped
- ½-1 lime, juiced
- Salt, to taste
- Cracked black pepper, to taste
Instructions
- Preheat your oven to 400°F and spray a baking dish with non-stick cooking spray.
- In a small bowl, mix together diced avocado, cherry tomatoes, red onion, and cilantro. Squeeze lime juice over the mix, then season with salt and pepper. Cover and refrigerate.
- Pat the salmon fillets dry with a paper towel and place them in the prepared baking dish.
- Whisk together olive oil, lime juice, lime zest, and chopped cilantro in a small bowl, then brush this mixture over each salmon fillet. Season with smoked paprika, salt, and pepper.
- Bake the salmon for 10-12 minutes or until it flakes easily with a fork.
- Serve immediately, topped with the avocado salsa.
Notes
For best results, use fresh salmon fillets and ripe avocados. Adjust lime juice and seasonings according to taste preferences.
