Ingredients
- 1 lb cod fillets
- 2 tbsp olive oil
- 2 tbsp lime juice
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp salt
- ½ tsp black pepper
- 4 corn tortillas
- 2 cups cabbage (shredded)
- 1 tomato (diced)
- 1 avocado (sliced)
- ¼ cup cilantro (chopped)
- ¼ cup sour cream or Greek yogurt (for serving)
- Hot sauce (for serving)
Instructions
- Preheat your oven to 400°F (200°C).
- Mix olive oil, lime juice, cumin, chili powder, salt, and black pepper in a bowl.
- Coat the cod fillets with the mixture and place them on a baking sheet.
- Bake in the oven for 12-15 minutes, or until the fish is flaky.
- Prepare the toppings: shred cabbage, dice tomatoes, and slice avocado.
- Warm the corn tortillas in a pan or microwave.
- Assemble the taco bowls: Place the tortillas in bowls, add flaky cod, top with cabbage, tomato, avocado, and cilantro.
- Drizzle with sour cream or Greek yogurt and add hot sauce if desired.
