  • Granulated sugar, 1/4 cup (60 ml) (50 grams)
  • Baking powder, 1 tablespoon (15 ml) (15 grams)
  • Salt, 1/2 teaspoon (3 ml) (3 grams)
  • Egg, 1 large
  • Milk, 1 cup (240 ml) (240 milliliters)
  • Unsalted butter, melted, 1/4 cup (60 ml) (60 milliliters)
  • Honey, 1/4 cup (60 ml) (85 grams)
  • Hot sauce, 2 tablespoon (30 ml) s (30 milliliters)
  • Green onions, finely chopped, 2 tablespoon (30 ml) s (10 grams)


Instructions

  1. Preheat the oven to 400°F (200°C) and grease a muffin tin.
  2. Wrap each shrimp with half a slice of turkey bacon and secure with a toothpick.
  3. In a bowl, mix cornmeal, flour, sugar, baking powder, and salt.
  4. In another bowl, whisk the egg, milk, and melted butter until combined.
  5. Add the wet ingredients to the dry ingredients and stir until just combined.
  6. Fold in the chopped green onions.
  7. Pour the batter into the prepared muffin tin, filling each cup about two-thirds full.
  8. Place one bacon-wrapped shrimp on top of each muffin.
  9. Bake for 15-18 minutes, until muffins are golden and cooked through.
