- Unsalted butter, melted, 1/4 cup (60 ml) (60 milliliters)
- Honey, 1/4 cup (60 ml) (85 grams)
- Hot sauce, 2 tablespoon (30 ml) s (30 milliliters)
- Green onions, finely chopped, 2 tablespoon (30 ml) s (10 grams)
Instructions
- Preheat the oven to 400°F (200°C) and grease a muffin tin.
- Wrap each shrimp with half a slice of turkey bacon and secure with a toothpick.
- In a bowl, mix cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, whisk the egg, milk, and melted butter until combined.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Fold in the chopped green onions.
- Pour the batter into the prepared muffin tin, filling each cup about two-thirds full.
- Place one bacon-wrapped shrimp on top of each muffin.
- Bake for 15-18 minutes, until muffins are golden and cooked through.
- While the muffins bake, combine honey and hot sauce in a small saucepan.
