Ingredients
- 1 lb large shrimp, peeled and deveined
- 2 ripe avocados, diced
- 1 cup cherry tomatoes, halved
- ½ cup red onion, finely chopped
- 1 cucumber, diced
- ¼ cup fresh cilantro, chopped
- 1 lime, juiced
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- Salt and pepper, to taste
- 1 cup fresh salsa (store-bought or homemade)
- 2 cups mixed greens (optional, for serving)
Instructions
- Heat a skillet over medium-high heat and add olive oil. Once heated, add shrimp and season with garlic powder, salt, and pepper. Sauté for 2-3 minutes on each side until pink and opaque.
- In a large bowl, combine diced avocados, halved cherry tomatoes, chopped red onion, diced cucumber, and fresh cilantro. Gently toss together.
- In a small bowl, whisk together lime juice, olive oil, salt, and pepper for the dressing.
- Add the cooked shrimp and fresh salsa to the vegetable mixture, drizzle with lime dressing, and toss gently to combine.
- Serve over mixed greens if desired and enjoy.

For added depth of flavor, consider marinating the shrimp in lime juice and garlic before cooking. Keep avocados and shrimp separate until serving if making ahead to prevent browning.
