Ingredients

  • 4 eggs
  • 2 ripe avocados
  • 2 teaspoon (10 ml) s lemon juice (or juice of 1 lime)
  • 4 slices thick bread
  • 1 cup (240 ml) cheese (grated, edam, gruyere or whatever you have on hand)
  • Salt & freshly ground black pepper
  • 4 teaspoon (20 ml) s butter (for spreading on toast)


Instructions

  1. Prepare the eggs by poaching them using your preferred technique.
  2. As the eggs cook, halve the avocados and remove the pits.
  3. Scoop the avocado flesh into a bowl and mix in the lemon juice along with some salt and pepper.
  4. Use a fork to mash the mixture until it is somewhat lumpy.
  5. Brown the bread slices in a toaster and spread them with butter.
  6. Evenly distribute the avocado mixture over the buttered toast slices and place a poached egg on each one.
  7. Sprinkle the grated cheese on top and serve right away.
  8. These toasts are delicious with a side of fresh or grilled tomato halves.
