Description

A comforting and flavorful Cajun seafood gumbo featuring shrimp, crab, fish, and the iconic ‘holy trinity’ of vegetables.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 lb white fish, cut into chunks
  • 1 lb crab meat
  • 1/2 lb oysters
  • 1 large onion, diced
  • 1 bell pepper, diced
  • 2 stalks celery, diced
  • 4 cloves garlic, minced
  • 1/2 cup vegetable oil
  • 1/2 cup Cajun seasoning
  • 8 cups seafood stock
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup okra, sliced
  • Salt and pepper to taste
  • Cooked rice for serving
  • Chopped green onions and parsley for garnish


Instructions

  1. In a large pot, heat vegetable oil over medium heat.
  2. Add diced onion, bell pepper, and celery; sauté until softened.
  3. Stir in minced garlic and Cajun seasoning, cooking for an additional minute.
  4. Add seafood stock and diced tomatoes, bringing the mixture to a simmer.
  5. Add okra and gradually incorporate shrimp, white fish, crab meat, and oysters into the broth.
  6. Simmer for 10-15 minutes until seafood is cooked through.
  7. Adjust seasoning with salt and pepper as needed.
  8. Serve over cooked rice, garnished with green onions and parsley.

Notes

Gumbo tastes even better the next day. Store leftovers in airtight containers and refrigerate.
