Ingredients

  • – 1 pound (454 g) shrimp, peeled, deveined, and tail removed
  • – 2 cloves garlic, minced
  • – 1 teaspoon (5 ml) chili powder
  • – 1 tablespoon (15 ml) low sodium soy sauce
  • – 2 tablespoons (30 ml) vegetable oil
  • – 1 teaspoon (5 ml) sesame oil
  • – 3 cloves garlic, minced
  • – 2 teaspoons (10 ml) ginger, freshly grated or chopped
  • – 1 medium red chili, chopped
  • – 1/2 cup (120 ml) water
  • – 2 tablespoons (30 ml) low sodium soy sauce
  • – 1 tablespoon (15 ml) dark soy sauce
  • – 2 tablespoons (30 ml) vegetarian oyster sauce
  • – 2 green onions, chopped

Instructions

  1. Mix the shrimp with the marinade components in a bowl and allow it to rest for 5 minutes.
  2. Warm the vegetable oil in a large pan over medium-high heat.
  3. Place the shrimp in the pan and cook for around 45 seconds to 1 minute on each side until they turn golden. Move them to a bowl.
  4. In the same pan, heat the sesame oil. Add the garlic, ginger, and red chili, and sauté for 30 seconds until fragrant.
  5. Pour in the water, soy sauce, dark soy sauce, and oyster sauce, then stir. Let the mixture cook for 2 to 3 minutes, allowing it to thicken slightly.
  6. Put the shrimp back into the pan and stir to coat them evenly. Continue cooking for another minute to reheat the shrimp, then remove from the heat.
  7. Sprinkle with green onions, extra red chilies, and/or sesame seeds for garnish.

Notes

  • Ensure the shrimp are properly deveined and tails removed before cooking for a more enjoyable dining experience.
  • Opt for low sodium soy sauce to manage the dish’s saltiness, particularly with naturally salty oyster sauce.
  • Adjust the chili powder and red chili amounts based on personal spice preferences to tailor the dish’s heat level.
