Description

A comforting dish that combines creamy grits with tender shrimp, flavored with bacon and Cajun seasoning, all made easy in a slow cooker.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 cup quick-cooking grits
  • 4 cups chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup cheddar cheese, shredded
  • 4 slices bacon, chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp Cajun seasoning
  • Salt and pepper, to taste
  • Green onions, for garnish


Instructions

  1. In the slow cooker, combine chicken broth and grits. Stir well.
  2. Add chopped bacon, onion, garlic, Cajun seasoning, salt, and pepper.
  3. Cover and cook on low for 4-5 hours, stirring occasionally, until the grits are creamy.
  4. In the last 30 minutes of cooking, stir in heavy cream and cheddar cheese.
  5. In a skillet, sauté shrimp until cooked through, then add to the grits.
  6. Serve hot, garnished with green onions.

Notes

For a spicier kick, add more Cajun seasoning or some hot sauce while cooking. Use fresh shrimp for best flavor.
