Description
A comforting dish that combines creamy grits with tender shrimp, flavored with bacon and Cajun seasoning, all made easy in a slow cooker.
Ingredients
- 1 lb shrimp, peeled and deveined
- 1 cup quick-cooking grits
- 4 cups chicken broth
- 1/2 cup heavy cream
- 1/2 cup cheddar cheese, shredded
- 4 slices bacon, chopped
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tsp Cajun seasoning
- Salt and pepper, to taste
- Green onions, for garnish
Instructions
- In the slow cooker, combine chicken broth and grits. Stir well.
- Add chopped bacon, onion, garlic, Cajun seasoning, salt, and pepper.
- Cover and cook on low for 4-5 hours, stirring occasionally, until the grits are creamy.
- In the last 30 minutes of cooking, stir in heavy cream and cheddar cheese.
- In a skillet, sauté shrimp until cooked through, then add to the grits.
- Serve hot, garnished with green onions.
Notes
For a spicier kick, add more Cajun seasoning or some hot sauce while cooking. Use fresh shrimp for best flavor.
