Delicious and vibrant shrimp tacos made quick and easy in an air fryer, topped with fresh ingredients like mango salsa and cabbage.
Ingredients
- 1.5 lbs. raw jumbo shrimp, tails off and deveined
- 1 tsp. smoked paprika
- 1 tsp. ground cumin
- 1 tsp. chili powder
- 1/2 tsp. salt
- 6 snack-size flour tortillas (Carb Counter)
- Shredded cabbage
- 1/2 a container of canned corn (150g)
- 1 small mango (chopped, 140g)
- 2 small vine tomatoes (chopped, 200g)
- 1/2 red onion (finely sliced, 100g)
- 1 cup fresh cilantro
- Juice of 1 lime
Instructions
- Toss the shrimp with seasoning, ensuring they are well-coated.
- Place the seasoned shrimp in the air fryer basket, arranging them in a single layer.
- Air fry at 400°F (200°C) for about 6-8 minutes or until the shrimp turn pink and opaque.
- Prepare the toppings while the shrimp cooks.
- Combine chopped mango, canned corn, diced tomatoes, finely sliced red onion, and half a cup of chopped cilantro in a bowl. Squeeze in half the lime juice and mix well.
- Warm the tortillas for a few seconds in the microwave or on a pan.
- Assemble the tacos by layering in the shrimp, shredded cabbage, and topping with the mango corn salsa.
Notes
Let tacos rest for a minute post-cooking to retain juiciness. Personalize toppings to suit your taste.
