Ingredients

  • 1 pound (454 g) large shrimp, peeled and deveined (450 grams)
  • 1 cup (240 ml) breadcrumbs (120 grams)
  • 1 cup (240 ml) shredded coconut, unsweetened (85 grams)
  • 1/2 cup (120 ml) all-purpose flour (60 grams)
  • 2 large eggs
  • 1/2 teaspoon (3 ml) salt (2.5 grams)
  • 1/4 teaspoon (1 ml) black pepper (0.5 grams)
  • 1/4 teaspoon (1 ml) garlic powder (1 gram)
  • 1/4 teaspoon (1 ml) paprika (1 gram)
  • Cooking spray


Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. Pat the shrimp dry with paper towels.
  3. In a bowl, mix the flour, salt, black pepper, garlic powder, and paprika.
  4. In a separate bowl, beat the eggs.
  5. In another bowl, combine the panko breadcrumbs and shredded coconut.
  6. Dredge each shrimp in the flour mixture, shaking off excess.
  7. Dip the floured shrimp into the beaten eggs, ensuring even coating.
