Ingredients
- – 1-1 1/4 pounds (450-567 g) salmon, cut into filets
- – salt and pepper, to taste
- – 1 pint (473 ml) cherry or grape tomatoes, cut in half
- – ½ cup (85 g) pitted green olives, cut in half
- – ½ cup (85 g) canned chickpeas, drained
- – 2 tablespoons (30 ml) olive oil
- – 1/2 lemon, juiced
- – 3-4 garlic cloves, chopped or minced
- – 1 tablespoon (15 ml) fresh dill, chopped
- – 1 tablespoon (15 ml) fresh parsley, chopped
- – ¼ cup (25 g) crumbled goat cheese
Instructions
- Set your oven to a temperature of 400 degrees F.
- In a tray suitable for baking, place the salmon pieces and sprinkle with salt and pepper. Surround the salmon with halved tomatoes, green olives, and drained chickpeas.
- Combine the olive oil, lemon juice, garlic, dill, parsley, and goat cheese in a separate container, then drizzle this mixture over the ingredients in the tray.
- Place the tray in the oven and cook for 15-20 minutes. Allow the dish to sit for 5 minutes before serving.
