Ingredients

  • – 1-1 1/4 pounds (450-567 g) salmon, cut into filets
  • – salt and pepper, to taste
  • – 1 pint (473 ml) cherry or grape tomatoes, cut in half
  • – ½ cup (85 g) pitted green olives, cut in half
  • – ½ cup (85 g) canned chickpeas, drained
  • – 2 tablespoons (30 ml) olive oil
  • – 1/2 lemon, juiced
  • – 3-4 garlic cloves, chopped or minced
  • – 1 tablespoon (15 ml) fresh dill, chopped
  • – 1 tablespoon (15 ml) fresh parsley, chopped
  • – ¼ cup (25 g) crumbled goat cheese


Instructions

  1. Set your oven to a temperature of 400 degrees F.
  2. In a tray suitable for baking, place the salmon pieces and sprinkle with salt and pepper. Surround the salmon with halved tomatoes, green olives, and drained chickpeas.
  3. Combine the olive oil, lemon juice, garlic, dill, parsley, and goat cheese in a separate container, then drizzle this mixture over the ingredients in the tray.
  4. Place the tray in the oven and cook for 15-20 minutes. Allow the dish to sit for 5 minutes before serving.
