  • Carrots, 2, julienned
  • Cucumbers, 1, sliced
  • Lettuce leaves, for serving
  • Cooked rice, 4 cups (800 g)


Instructions

  1. In a large bowl, combine gochujang paste, soy sauce, honey, sesame oil, minced garlic, grated ginger, rice vinegar, brown sugar, and lime juice.
  2. Whisk the mixture until all ingredients are evenly combined.
  3. Add chicken thighs to the bowl, ensuring they are fully coated with the marinade.
  4. Cover the bowl and refrigerate the marinated chicken for at least 1 hour.
  5. Preheat the oven to 400°F (200°C).
  6. Place the marinated chicken thighs on a baking sheet lined with parchment paper.
  7. Bake in the preheated oven for 25-30 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165°F (74°C).
