Ingredients

  • – 1 lb (450g) shrimp, peeled and deveined
  • – 1 tbsp (15 ml) light soy sauce
  • – 1 tbsp (15 ml) cornstarch
  • – 2 tbsp (30 ml) vegetable oil
  • – 3-4 cloves garlic
  • – 1 tbsp (15 ml) ginger paste or grated ginger
  • – 4 tbsp (60 ml) honey
  • – 1/4 tsp (1 ml) chilli flakes, optional
  • – 2 green onions, for garnish

Instructions

  1. In a medium bowl, mix together the light soy sauce and cornstarch, then add the shrimp and stir until well coated. Set aside until it’s time to use. (This technique, known in Chinese cuisine as “velveting,” helps keep delicate proteins like shrimp moist during cooking.)
  2. Warm the vegetable oil in a non-stick skillet and sauté the minced garlic and ginger for no more than 30 seconds over medium heat, then introduce the shrimp and cook for about 1-2 minutes on each side, depending on their size.
  3. Drizzle the honey and add chili flakes if desired, stir to thoroughly coat the shrimp, and then remove from the heat. Garnish with chopped green onions. This dish can be served over rice or as an appetizer.

Notes

  • Ensure the shrimp are dried thoroughly before coating in soy sauce and cornstarch for optimal crispiness and better flavor absorption.
  • Adjust the honey quantity to your desired level of sweetness by tasting as you go to achieve the perfect balance of flavors.
  • For a spicier dish, increase chili flakes or add a pinch of cayenne pepper before serving. Consider adding colorful vegetables like bell peppers or snap peas for added flavor and visual appeal.
