Ingredients

  • – 200 g (7 oz) pasta (fettuccini, spaghetti, or penne work well, 100 g / 3.5 oz per person)
  • – 1/2 cup (125 ml / 4.2 fl oz) beef stock
  • – 2 tbsp (30 ml) all purpose gochujang sauce (sub just gochujang)
  • – 1/3 cup (80 ml / 2.7 fl oz) coconut cream
  • – 3 tbsp (45 ml) tasty or cheddar cheese (plus extra for garnish)
  • – 3 tsp (15 ml) cornstarch (cornflour) dissolved in 3 tsp (15 ml) cold water to make a slurry for a thick sauce


Instructions

  1. Prepare the pasta following the package directions and remove the water afterward.
  2. While the pasta cooks, place the beef stock in a medium-sized pot on medium heat. Incorporate the gochujang sauce and stir until well combined. Add the coconut cream and let it gently bubble.
  3. Introduce the cornstarch mixture and continue stirring until the sauce becomes thick, which should take about 1-2 minutes.
  4. Lower the heat and mix in the cheddar cheese until it fully melts, which will take about a minute.
  5. Combine the sauce with the drained pasta, toss to coat, and then serve.
  6. Optional – Add extra cheddar cheese on top for garnish.
